    Dr. Thierry Tran trained in Food Science and Technology, and has 17 years of research experience in postharvest processing and its influence on quality and sustainability of cassava and other RTB products. His research interests combine different approaches including evaluation of post-harvest quality traits, processing ability, process efficiency (energy, water and product losses), utilization of by-products and environmental impact assessments. He has worked at CIRAD (Montpellier, France), Kasetsart University (Bangkok, Thailand) on large-scale cassava starch production systems, and is currently contributing to the Cassava Program at the Alliance Bioversity-CIAT (Cali, Colombia).

    Current job: CIRAD, Food Science Researcher on sensory quality of tropical crops, RTBfoods sensory focal point

    Main research interests: For over 20 years, Christophe has specialized in understanding the determinism of sensory quality in dairy products (cheese, thesis) and fruits (banana, mango and plantain). During 13 years spent in the French West Indies, he was involved in identifying the physico-chemical determinants of sensory (appearance, colour, texture, flavour, aromas), nutritional (minerals, polyphenols) and technological (storability) quality in bananas. He characterised hybrids from the banana breeding programme created by CIRAD and developed methodologies for their evaluation. On both bananas and mangoes, he was interested in the pre- and post-harvest factors impacting the final quality of the products. He also participates in the development of crops (banana, mango, RTB) in the Caribbean and Africa through expertise, training and specific studies aimed at improving the quality of products.
